'Play' data over time

I was playing around with different data sources and was curious if you had any recommendations or best-practices for working with data over time. For example, I have a data table with how a fruit changes color over time (let’s say a week). What would be a good way to ‘replay’ that data in a few seconds/minutes whatever the time-frame. This is a bit hypothetical at the moment, so I can’t provide any examples  just trying to wrap my head around how I would go about modelling something like this.

I would have all the data saved in either a collection or just in an array or other data structure in Javascript. You could then loop through that data every second and save it in another collection that represent the current state.

So the big collection would like like this:
[ {name: 'apple', colors: ['red', 'green', 'blue']}, ... more fruits... ]

“Current state” collection:
[ {name: 'apple', color: 'red', ... more fruits ... ]
after some time:
[ {name: 'apple', color: 'green', ... more fruits ... ]

The “Current State” collection would be the one that’s connect to For Each nodes. The bigger collection would only be used in Javascript to update the “Current State” collection.

Hope that made sense!
